<p>Hailing from Hino, a village near Lake Biwa inn. Japan’s Shiga Prefecture, Chef Shige discovered his passion for cooking through traditional Japanese dishes made by his mother. After graduating from Taiwa Culinary Institute in Kyoto, he honed his craft across Japanese, Chinese, French, and Italian kitchens, developing a signature fusion style</p><p><br></p><p>Inspired by Kyoto’s fusion pioneer Chef Sasajima, Shige joined renowned kitchens including Chimera, where he helped earn a Michelin Star, and eventually fulfilled his dream of joining Sasajima’s team</p><p><br></p><p>Chef Shige emphasizes purity of flavour through techniques like charcoal grilling, enhancing ingredients’ natural essence.
